Best fall recipe ever.
My sil Kristine introduced these to me when we were in Logan, Utah going to Utah State. (go Aggies!) I had never even heard of corn puffs. I became addicted and made her make these whenever we came over to play Pit or Phase 10.
When we lived in Lubbock, I could not find these anywhere. Now, in Virginia I have Kroger again and these are $1 a bag. Wahoo! I’ve also seen them at Big Lots, Food Lion, Macy’s food stores (in Utah) in the chip aisle.
Now of course, you can make this with regular popcorn, but the wonderful thing about these is that they have no kernels. So, it’s like caramel corn but lighter and fluffier and much more fun to eat. A perfect quick treat for family night, chilly autumn evenings, put some in clear cellophane bags and tie with a ribbon for a fun treat to give away, or to take camping. My kids like them without any almond stuff. Enjoy!
2 c. brown sugar
¼ tsp salt
1/2 c. light Karo syrup
1 stick (1/2 cup) butter or margarine
1 Tbsp water

dash of almond extract (optional)
2 pkgs (5-6 oz size) corn puffs
sliced almonds (optional)
Blend top ingredients together over medium heat. Once it comes to a boil, cook for one minute, then remove from heat.
Add almond extract (optional)
Pour over corn puffs and stir until coated and then add almonds.
* Have fun eating without worrying about biting into a kernel.
* Please don’t blame me for the 3 pounds you gain when you hide yourself in the garage and eat the whole blasted bowl yourself.
